Stew Turkey (Haitian Turkey (Koden’n)

One of my favorite Haitian foods is stew turkey and today I’ve decided to share my recipe with you. Haitian turkey is one of those meals you can’t go wrong with. It will take you about an hour to an hour and a half depending on what you plan on making it with.

Ingredients

  • 2 pounds Turkey Wings Cut up in chunks
  • 2 lime to clean the meat
  • 1 cup vinegar to clean the meat
  • 1 large onion sliced
  • 1 tbsp salt
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 2 sprigs thyme
  • 1/2 green bell pepper sliced
  • 1/2 red bell peppers sliced
  • 2 tbsp Haitian Epis You can find how to make it in the food section.

Instructions

  • Put turkey in large bowl and rinse turkey pieces in cold water.  Drain water and firmly wipe turkey with lime halves, poor vinegar and let sit for a couple of minutes then pour and rinse with water again.  Return turkey to large bowl.  Add a cooking spoon of Haitian epis.  Pour over the turkey, cover and let marinate in refrigerator for at least one hour.
  • Heat the oil.  Brown the turkey for 35 minutes, covered, reserving the marinade juices.  Add tomato paste, remaining onion, thyme, and pepper slices to reserved marinade juices and pour over the turkey once it’s browned.  Lower heat and simmer for 35 more minutes, covered, stirring occasionally so sauce does not thicken too much.  Taste and adjust salt. Serve with rice, boiled sweet potato, or plantains.
